How to Use

1. Pat your carp fillets (or steaks) dry with paper towels. Sprinkle 1 to 2 tablespoons of the seasoning blend evenly over both sides of the fish, pressing the herbs gently into the flesh.

2. Cover and chill the seasoned carp in the refrigerator for at least 30 minutes (or overnight) so the marjoram, mustard seed, and allspice can infuse into the fish and neutralize any earthy notes.

3. Dredge the fish lightly in flour (or an egg-and-breadcrumbs coating) and fry in hot oil or clarified butter over medium heat for 4–5 minutes per side until golden brown and cooked through.
